Dough Saver For Buns, Rolls,and English muffins
Bakerys providing products to large restaraunt chains run at speeds of 150 cuts per minute accross 8 lanes or more. At 72,000 buns per hour with a 3-to-8-gram reduction per unit equals 750 pounds per hour. Just the sheer number of dough pieces produced on one of these lines accelerates the Dough Savers systems ROI. The yield and overuse impact is tremendous along with improved quality scores. We provide three versions of our Dough Saver Buns and Rolls. One version replaces the proofer rotary gate with a rotary gate that weighs each dough piece before placing them in the proofer tray. One version convienient for retrofit of an existing line. This version fits between the proofer rotary gate, and the end of the rounder conveyor. The Zig Zag flouring board is removed and replaced with the weigh system making for easy installation. The third version puts weigh buckets in your proofer to periodicaly tip dough pieces in to weigh buckets and then release them back into the proofer tray they were released from.
All of these systems provide high precision weigh cells to weigh dough portions to at least .05 grams, in less than 300 miliseconds. The average weight of each lane is monitored, and scaling adjustments are made automatically to defeat any of target weight trend
